I haven’t shared many recipes in a while, but I discovered something this week that I thought I would love to share with all of you “wholesome” eaters.
We just got a Vitamix! Woohoo. It’s one of those kitchen gadgets that follow buying a house. You buy the house, and then you look at each other and say, “we need a vitamix now.”
That didn’t happen to you?
Oh, well, Samuel and I are just different. I obsess over kitchen gadgets/appliances, and he wanted a better medium to make protein shakes than the little handheld blender we’ve had since we got married, so bam the shared decision to get a Vitamix was born.
I was hesitant at first only because the price tag is much steeper than the average blender, but upon reading reviews and hearing the praise of it from other users, we decided we might as well christen our new house with a legitimate blender. And I’m so glad we did. The massive “cookbook” alone that comes with it is worth a few of the extra pennies. You can practically do everything but bake a cake in it. Who knew?
Since we got it, I’ve been experiencing with different ways to use it from chopping up veggies to frozen coffee drinks to triple berry smoothies. I discovered one of my favorite mixes this week: Cherry Chocolate Smoothie. It’s so easy, but it’s so delcious. And it’s healthy. Yes! Don’t you love it when something delicious is healthy for you? I know I do. It was so good, I made it two days in a row, and I enjoyed every slurp. It’s the perfect nod to this warm weather as well as a salute to all of the cherry blossom trees blooming outside.
Chocolate Cherry Smoothie
In a blender (Vitamix, or whatever type you have) put in:
1 cup plain Greek yogurt
1 cup frozen pitted sweet cherries
3/4 cup coconut water
7 pitted Tunisian Dates
1 heaping spoon of cocoa powder
Blend until smooth. Pour into a cup, sprinkle some roasted cocoa nibs on top, insert straw and enjoy.
If this doesn’t put a smile on your face, I don’t know what will. Have a wholesome weekend.
